    Calendar for January 2019 Cooking Classes

    Mexican Cuisine 1st Course; Mexican Prehispanic Cooking tools & Cooking techniques Course

    Monday 7th of January from 14:00 to 17:00 Cost 580.00 Pesos Per Person 

    You will learn how to use Traditional Mexican Prehispanic Culinary Tools; we will work with different types of ‘Molcajete’ volcanic rock grinders, different types of ‘Metate’ grinders, roast on ‘Comal’ pan’s, use the mesquite wood Tortilla press and you also will learn about the mesquite wood Tortilla printer. You will learn about ‘nixtamalization’ of corn, about ‘tatemar’ on open fire and we will make tortillas with our fresh made dough. We also will prepare different molcajete sauces, a prehispanic cacao drink and make guacamole in molcajete and we also will make some Huitlacotche fungus quesadillas.

    Wednesday 9th of January from 10:00 to 13:00 Cost 580.00 Pesos Per Person

    We will make:

    Eggs benedict style (English Muffin (which we make fresh made from the scratch)-Crunchy Smoked Bacon – Poached Eggs – we make from the scratch the Béarnaise sauce)

    Spinach – mushroom – cheese omelet (with local organic eggs)

    Mexican ‘Chilaquilles’, Crunchy tortillas cooked in a green tomatillo sauce, served with fried egg, Mexican cream, fresh ranchero cheese and avocado

    Croquet Madame (baked ham and cheese sandwich topped with a fried egg)

    Mexican Cuisine 2nd Course; Let’s make Mexican Salsas:

    Wednesday 9th of January from 14:00 to 17:00 Cost 580.00 Pesos Per Person 

    Three different cold served table center sauces – Red Roasted tomato chili sauce + Roasted Green tomatillo sauce + Avocado/lemon sauce, all made in ‘Molcajete’ (volcanic rock grinder)

    Mexican ‘Adobo’ (traditional to marinate any kind of meats or fish & also for stews and sauces)

    ‘Chile Toreados’ (spicy serrano pepper sauce)

    Hot served sauces for ‘enchiladas’, ‘chilaquiles’, egg dishes or other Mexican dishes – Red (‘Salsa Roja) + Green (‘Salsa Verde’)

    Mexican “Pico de Gallo” Sauce

    And of course we will enjoy them all with some fresh and also crunchy baked tortillas and Turkey meat.

    We will work with Mexican dehydrated, canned, smoked and fresh Chiles and make different traditional preparations and dishes with them. We will cook and of course join after:

    Chile relleno’ (with egg covered Poblano pepper, stuffed with cheese and covered with tomato sauce)

    Crab cakes (made from fresh cooked Blue Crabs)

     We will start with making our ‘homemade egg pasta dough’ (which you also can use for any kind of other Pasta types)

    We make a fresh ricotta spinach stuffing

    We do ‘Spinach & ricotta cheese raviolis’

    To serve them, we also will do ‘Arrabiata sauce’

    After we will make with ‘meat and parmesan cheese stuffed tortellini’, which we will cook and serve in a rich beef broth.

    We start to make our own fresh homemade pizza dough, after we do a quick fresh pizza sauce and then we will have fun and make many types of pizzas like thin crust, thick crust, with cheese stuffed crust. Everyone can finish his own pizza with your choice of ingredients (there will be many to choose). Everyone will also make a fresh made ‘Calzone’ (stuffed baked pizza dough) for which you also can choose your favorite ingredients for the stuffing.
