    This class is for how to learn to work with Mexican dehydrated Beans and how to prepare different dishes with them.

    1: I will demonstrate many different types, colors and sizes of Mexican Dehydrated Beans and tell you a little bit about the different varieties and how and when to use which type and also share with what and how to serve them

    2: I will explain about the sprouting process and the importance doing it, before we want to eat them

    3: I will talk about the cooking techniques and tools we can use to cook them

    4: I will explain how to make different dishes with them and how to apply combined cooking techniques in the cooking process

    5: I will show traditional Mexican flavors and ingredients which are great to combine with beans

    6: I will show and demonstrate a few culinary techniques which we can use with Beans

    7: I will share with you, how to turn beans into Puree or Refried Beans or how to use them in Clear or blended Soups, in Stews or as individual dishes.

    2: ‘Dampfnudel’; (Steamed white soft yeast bun, it’s more sweet then salty but can be eaten as a meal or as a dessert, stuffed with fruits and topped with a cinnamon sugar butter)

    Class subject: The Potato Cooking Class – What else to do with them!

    In this class I want to show and demonstrate a few culinary cooking techniques we can apply with potatoes and share a few recipes of different things we can make with them.

    1: I will give a short introduction about Potatoes in general and how we can use them and about the difference of certain varieties and the use of them in different cultures. (Russet Potato VS Mexican Potato)

    2: I will share many tips and tricks on how to work with pre-boiled and with raw potatoes and how to prepare different appetizers, soups, side dishes or main dishes with them

    3: I will show how to make 2 types of potato tarts, one from grated raw potato and one from pre-boiled potatoes

    4: I will demonstrate how to make French Pom Croquette, crunchy from the outside and smooth like a mashed potato in the inside

    5: I will cook a Potato Gratin with a combined cooking technique, first we cook it in a creamy sauce and after we add some cheese and bake it in the oven.

    3: I will show how to make ‘Pulpo a la Gallega’; (Galician Style Octopus, served with cooked potatoes, smoked paprika, extra virgin olive oil and more)

    4: ‘Croquetas de Jamón Serrano’; (Fresh made crunchy Serrano ham Croquettes)

      Several “amigas” and I left the cold US and descended on a friend who has been a resident of beautiful and warm San Miguel for 18 years. During our visit we took a cooking class with Chef David. We learned a lot about the history of cooking in Mexico; the origin and uses of the native tools and ingredients (the are 67 types of native chilies from which 300+ hybrids have been created) and we had great fun cooking, then eating seven kinds of salsas, soup & mole. Well worth the time and investment.
