Bring up the subject of food, and everyone’s ears perk up. San Miguel de Allende has become world renown as an epicurean’s haven. Here, foodies delight on an abundance of high-quality food. One of this area’s better-known producers of quality food products is Sophia Trapp, executive director of Cañada de la Virgen ranch and our guest speaker this Tuesday at the regular weekly meeting of the Midday Club of San Miguel de Allende.
Located near the pyramids and archeological site bearing the same name, the Cañada de la Virgen ranch specializes in certified organic, grass-fed beef from a mixed herd of about 800. The ranch has been continuously certified organic by an Italian certification company, BioAgricert, since 2009. Their cows are strictly grass-fed, grass-finished, supplemented with vitamins, minerals, and rock dust, producing a superior meat product.
When Canada Virgen was accepted into the Mexican federal program of nationally protected natural areas, Cañada de la Virgen made a commitment to the conservation, protection, and restoration of all national and indigenous flora and fauna of the region. The historic hacienda was restored several years ago, along with surrounding casitas, ad are available for ecotourism and agritourism.
They also grow other organic foods, and soon, you’ll see more Mexican corn, beans, fruit, and other certified organic items available. When you stay at one of the casitas, you’ll see firsthand the amazing vegetables and Mexican specialties available from the ranch.
Sophia Trapp holds degrees in Architecture, Design, and Environmental Design as well as a Masters in Landscape Architecture, Sustainable Development, and Master planning. She has served on the boards of a variety of International Environmental Organizations and is a 3rd generation female cattle rancher
